We got mostly roma tomatoes, and I made about 12 more jars of roasted tomato sauce. Then we sliced and chopped all the peppers for freezing in ziplocs.
Being in the field at the end of the season with tens of thousands of tomatoes that will probably just rot on the vine made me feel like there is enough abundance, but not enough pickers or homemakers to capture it. There is so much waste of viable produce on farms, because willing labor is missing. People want only the perfect peppers, and they want them delivered to the grocery store. Someone with a paring knife, a freezer, and some patience could salvage so much!
It's kind of exciting how a few hours of work at the front end can set up you up for the whole winter! It's also exciting to save money and be out in the country touching the ground and smelling the field.
