It took about 7 weeks, but yesterday I finally made sauce from the apples we picked in October. Stirring a stockpot full to the brim of applesauce made me feel strangely powerful. Seeing all my little canned progeny huddled together on the table makes me feel very proud.
This the the extent of my canning for this year. Earlier I thought we might have to attempt a tomato-less winter due to our failure to plan, but recently I found out that both Muir Glen and Trader Joe's don't use BPA in the cans of their tomato products. (This is especially important for tomatoes, because their acidity really draws the BPA out into the food, and BPA messes with gene expression.) Phew!
