Last night I finally got around to addressing the bag of green tomatoes we picked before tearing out the plants for the season.
I made Green Tomato Salsa Verde from the Simply in Season Cookbook, and slightly altered the recipe this way:
2 c. green tomatoes
1/3 c. water
1/4 c. olive oil
1 tsp salt
1 tbsp lemon juice
3 cloves garlic.
1/2 jalapeno pepper
some green onions
Puree in the blender.
It's really more like a sauce than a scoopable salsa, which is perfect for making a very simple dish (brown rice and black beans) very tasty.
I canned six little jars, which was only about half the yield. Beats paying $2 a jar a Trader Joe's.
